
At this time of year wild garlic is in abundance. Often found in shady woodland it’s smell is unmistakable. It has so many culinary uses from pesto, to soup, to pickled flowers. My lovely friend popped a bag of it over my gate this week and I made my all time favourite recipe: scones.
Ingredients: (Makes approx 20 small scones)
- 100g self raising flour
- 2 teaspoons of baking powder
- 1/2 teaspoon of salt
- 125g grated mature cheddar cheese
- 100mls milk
- 100g salted butter or margarine
- 2 tablespoons of chopped wild garlic
Method:
- Mix together the flour, baking powder and salt together in a bowl.
- Rub in the butter until the texture is crumbly.
- Add in the cheese, garlic and milk to make a dough.
- On a lightly floured surface, gently knead the dough into a ball.
- Roll out to 1.5cm thick and cut out using a 5cm round cutter.
- Place on a lined baking tray
- Brush the tops with milk.
- Bake in a pre-heated oven at 200`c for 10-15 minutes until the tops are golden and the scones are cooked through.
- Serve warm with salted butter or enjoy with a bowl of soup!


oh these look lovely. I have looked everywhere for will garlic but I still haven’t found any. I do have chives though x
