When the chive blossom arrives in May I love to make this vibrant green pea soup and add it as a garnish. It’s simple and delicious and is often a good way of using up any of last years frozen peas from the plot in preparation for this years glut.

Ingredients:
(serves 2)
750g of frozen garden peas
1 onion, finely chopped
2 cloves of garlic, chopped
Knob of butter
3 tbsp chopped chives
750mls of hot vegetable stock
20mls single cream
Salt and pepper to taste
To garnish:
Chopped chives
Black pepper croutons
Chive blossom
Method:
1. Fry the onions and garlic in the butter in a pan until lightly softened.
2. Add the stock, chives and peas and bring to the boil for 10 minutes
3. Season with salt and pepper to taste.
4. Blend with a hand blender, adding more water if preferred.
5. Stir through the cream and warm again.
6. Top with fresh chives, croutons and chive blossom before tucking in.
